| Abstract: | Summary The study in question was aimed at identifying, evaluating, monitoring and verification of potencial risks, observed in the beer production factory "Birra Peja". Comprehensive study was carried out for all the beer production chain, including areas inside and outside as well as those of production and servige in close cooperation vith all production staff and laboratory to the factory. From analysis and risk assessment in these processes work, nine of them were identified as critical control points (CCP), which in the implementation phase was reduced to two and the completion of the deployment of corrective and preventive measures after the verification system documented, established in accordance with HACCP, the system resulted effective. Experimental tests in the laboratory showed a significant improvement of the quality of the final product, particularly in light of his life. |
| Abstrakti: | Përmbledhje Studimi në fjalë pati qëllim identifikimin, vlerësimin, monitorimin dhe verifikimin e rreziqeve potencialë, të vërejtur në prodhimin e birrës në Fabrikën "Birra Peja". Studimi gjithëpërfshirës u krye për të gjithë zinxhirin e prodhimit të birrës, përfshirë mjediset brenda dhe jashtë saj si ato të prodhimit edhe të shërbimit dhe në bashkëpunim të ngushtë me të gjithë stafin e prodhimit dhe atë të laboratorit të fabrikës. Nga analiza dhe vlerësimi i rrezikut në këto procese pune, 9 prej tyre u përcaktuan si pika kritike të kontrollit (PKK), të cilat në fazën e zbatimit u reduktuan në dy dhe në përfundim të vendosjes së masave korrigjuese dhe parandaluese, pas verifikimit të sistemit të dokumentuar, të ngritur në përputhje me HACCP, sistemi rezultoi i efektshëm. Provat eksperimentale në laborator treguan për një përmirësim të dukshëm të cilësisë së produktit përfundimtar, sidomos në aspektin e jetëgjatësisë së tij. |
